Abstract

The textbook reveals in a logical sequence the mutual influence and interdependence of factors in the formation of the quality of juicy products, starting from their cultivation to storage regimes and modern storage technologies. The reasons for the occurrence and development of diseases during storage are considered and emphasis is placed on ways to prevent them.
